RAF is Fujifilm's raw format, written by the X-series — X-T5, X-H2 and X-H2S, X-Pro3, X100V and X100VI — and by the GFX medium-format bodies. What makes RAF genuinely different is the sensor beneath it: most X-series cameras use X-Trans, a 6—6 colour filter array instead of the standard 2—2 Bayer pattern. Fujifilm designed it to suppress moiré without an anti-aliasing filter, but it means demosaicing software has to be written specifically for it. Converters that treat X-Trans as Bayer produce the artefacts Fuji shooters know well — smeared fine detail and the 'worms' that show up in foliage. GFX bodies use a conventional Bayer sensor and don't have this issue.
Conversion runs on your device with the embedded preview as a fallback — often the outcome Fuji shooters want, since that JPEG carries the film simulation you set in-camera. Olympus ORF and Panasonic RW2 have their own converters, and RAW to JPG takes a mixed folder in one go.

Good to know
X-Trans demosaicing is genuinely hard, and this is the format most likely to fall back to the embedded preview. That's often the outcome Fuji shooters actually want — the embedded JPEG carries the film simulation you set on the camera, which a neutral raw decode deliberately discards.
