What actually survives the conversion

Most of the EXIF block carries over: capture date, camera model, exposure, focal length and orientation. That is usually what people want, because it is what photo libraries sort and search by. If the date matters to you, check it after converting a test file rather than assuming, since some tools rebuild EXIF from scratch instead of copying it.

The field to think about before you share

GPS coordinates are the one worth a deliberate decision. A photo taken at home carries your home address to a precision of a few metres, and it travels with the file into anything that does not strip it.
